The Texas Vegetarian

This is the meal that I cooked during class at the Culinary Arts Institute last Friday. Braised beef with soft polenta, roasted vegetables and asparagus.View image
I couldn’t eat that much meat but the polenta, the roasted vegetables and asparagus were deeeelicious. Coincidentally, I read an article one of the chefs shared with me about the food native Texas Indians ate and the basic vegetables, corn, squash and beans, were widely consumed, as were nuts, berries, cactus and that wonderful fruit, the prickly pear. I think that soon we Texans will return to the mainly vegetarian meals of our ancestors. Meat will be ok once in a while.
