Saul, that is not true. My family is from northeast Tamaulipas and I grew up eating this exact bread my mom would make us. She sweetened it with sugar. We didn’t eat it often so it felt like a real treat when she would serve it to us.

The thing is, she never called it pan de campo, because, well, people from the actual campo don’t need to call it pan de campo. This is still made by the people living in campos, ie – ejidos, ranchos; by ganaderos, vaqueros who still roam the desolate, dare i say forgotten lands of northeastern Tamaulipas.

My family is from northeastern Mexico as well, and I grew up with my mom making this exact bread. She NEVER called it pan de campo, because, well, people from the actual campo don’t need to call it pan de campo…haha.

So Yes it is a northeastern mexican dish. It is made by the people in northeast Tamaulipas who live in ejidos, people who are ganaderos, vaqueros, the people who are the still cowboys roaming those desolate lands.

I’m from northeastern Mexico, and I’ve never heard of “pan de campo” I think this is not a Mexican dish, but a Chicano dish and it’s only found in Texas. The only bread common in northeastern Mexico is pan francés and bisquetes tampiqueños, which I still eat.
