There are still some “molinos” that sell freshly ground corn masa. It will keep refrigerated for a couple of days. Dehydrated corn masa, called masa harina, corn flour or tamalina, is probably what is available in most places. I buy non-GMO corn flour from online vendors. I cannot recommend one brand over another and suggest you look online for a reliable vendor. Masa harina or corn flour was first called “Tamalina” and was invented and patented by José Bartolome Martinez in San Antonio in 1909. Hope this helps.
