Just to clarify, adding rice to the albóndigas is not unique to Texas, or Northeastern Mexico. It’s also done in the rest of Mexico and other parts of Latin America and Spain. The rice serves as a binder to hold the meat together. My mother, who is from Veracruz would always add arroz to the albóndigas, she prefer it over eggs because rice was cheaper.
