Of course, everyone’s mom makes the best fideo. But everyone in my family says it about my mom’s fideo. Always toasted until some pieces were almost burned, with onion and stewed tomatoes, oregano, comino. Sometimes with ground beef, sometimes little cubes of steak, sometimes solo. But always delicious and comforting. I had never heard of fideo loco until a few years ago.

First fideo–Plain at home. My Mami made it with just the fideo, onion, black pepper, tomato (ingredients mashed in molcajete) and chicken broth (occasionally just water). When I was about 12 she begin adding potatoes–2 starches but that’s my favorite. Years later she would add ground round–making it fideo loco now. For my birthday she would always make me fideo with potatoes.

Do you prefer Fideo over Fideo Loco? I’ve never tried Fideo Loco, so I can’t say. But I do love fideo.
