Hi, Al. I’m glad that you commented about the clove and cinammon. It’s a wake up nod to me. I’m going to make another post about that, since in Texas it was not so easy to get either, especially if you were poor. So there is a strong tradition of the chorizo w/out those two European (Arab and Indonesian) ngredients. Thanks very much for keeping me honest. I really appreciate it!!

That’s the way my family in south Texas would make it (without the cloves or cinammon)and the way I make it still. I’ve been asking people for years about the vinegar part and they don’t know what I’m talking about. We make our very lean and freeze it as well. Sometimes we add diced potatoes when we’re cooking up the chorizo just to add a little heft (and taste). Delicious! Thanks for your recipe.
