The paste should be completely smooth ( don’t add water). The black pepper is ground to a fine powder, as is the comino, and the garlic moisture is what binds it all into a smooth paste. Just make sure there are no big granules, just finely ground black pepper specks.

I have made this dish many times but have added ground spices. I want to try this by mang the paste you use. I assume you are using fresh serrano and dry pepper corns. Can you add a video show ing how to make the paste and the right consistency? Also, my mother used pork cubes. ( San Antonio. ) Any thoughts about that? Thank you. I love to make this food!!!
